Number of Servings: 4


    1 lb. boneless, skinless chicken, cut into small pieces
    2 Tbsp. dark sesame oil
    1/2 cup sliced leeks
    1 cup sliced carrots
    1 cup sliced mushrooms
    2 cloves garlic
    1 cup broccoli pieces
    1 cup snow peas
    1 can sliced water chestnuts, drained
    2 Tbsp. minced fresh ginger
    4 Tbsp. Hoisin sauce
    1/4 cup (or so) soy sauce
    1/2-3/4 cup chicken broth
    2 cups cooked basmati rice


Chop all the vegetables and cut up the chicken in advance. Heat sesame oil in large skillet or wok; cook the chicken and leeks until chicken is no longer pink. Add remaining ingredients and toss over medium high heat until vegetables are a bright color, heated but still crisp. Serve over rice. Makes 4 generous servings.
