    1 large onion, diced small
    2 tbsp. olive oil
    1 tbsp. minced garlic
    1 tbsp. creole seasoning
    1 tsp. oregano
    1 tsp. thyme
    8 cups cooked small red beans or 4 cans red beans, rinsed and drained
    1 tbsp. worcestershire sauce
    1 tsp. tabasco or other hot sauce or to taste
    2-3 bay leaves
    1 tsp. red wine vinegar
    optional: 2 cups diced ham or louisiana hot sausage (not calculated in nutrional info)


Soak beans overnight and cook or drain beans and rinse well. Set aside to drain.

In a large, heavy skillet saute garlic in olive oil until it begins to brown, about 5 minutes. Add garlic and saute for 2 minutes. Add creole seasoning, thyme and oregano and saute 2 minutes. Transfer onion mixture to crock pot, add beans and remaining ingredients. Cook on high 4 to 8 hours. Canned beans will soften faster than cooked beans. Check mixture starting after 4 hours until beans reach desired tenderness. serve with cornbread or a scoop of white rice. makes 8 servings.
