You can make these anytime with pretty much anything on hand. You can make these anytime with pretty much anything on hand.

    1 Mission Low carb burrito size tortilla

    About 1/4 chicken breast shredded. I prefer left overs or rotisserie chicken breast

    1/4 c. Shredded 2% Mexican four cheese blend

    About 2 Tbsp roasted red peppers chopped

    About 2 Tbsp canned mushrooms

    About 1 Tbsp chopped onions, I prefer red onion

    About 2 Tbsp chopped Jalapenos. I prefer pickled/jarred

    Garlic powder to taste
    Dried cilantro or parsley to taste


This will make a BIG Quesadilla so I prefer this being 2 servings and that's what the calories indicate. You can add more or less cheese but the nutrition value is just for 1/4 cup.

Preheat 10 in. skillet to slightly hotter than Medium heat. Spray pan with non stick Pam or equivalent.
Lay out burrito on large plate. Add a small amount of the cheese on one half. Spread the chicken on that same half. Add a little more of the cheese on top of chicken then add the onions, mushrooms, red peppers, jalapenos and then garlic powder and cilantro. Then top those ingredients with remaining cheese. Fold over and put in preheated pan. Cook on one side about 5 minutes give or take a minute. Then flip over on other side and cook for about another 5 minutes. Take out of pan and using a pizza cutter, cut down the middle. Can garnish with salsa and sour cream (not included in recipe nutrition)
