Number of Servings: 4


    Canola Oil, 1 tbsp
    Onions, raw, 1 cup, sliced thin
    Cumin, 1tsp
    Green/Red Peppers (bell peppers), 1.5 cup, strips
    Chicken Thigh, 5 thigh, bone and skin removed
    Soy Sauce, 2 tbsp
    Hot Sauce


Spray pan with non-stick spray.
Heat Oil.
Sauté sliced onions until golden and soft. Can ad 1 tbsp sauce sauce while stirring.
Add Cumin and sprinkle water so doesn't stick to pan.
Add Chicken pieces and cook.
Add strips of Bell peppers, rest of the soy sauce and hot sauce.
Stir until everything is cooked.

Serving size: two table spoons.

Serve on medium sized whole wheat tortilla, with hummus spread and top with 1 fat free cheese slice.
