Introduction

Amazing tasting almond biscotti, really simple to make. I used the Splenda Blend for Baking mix, but it works just as well with white sugar. I usually put in a little bit more vanilla and almond extracts than what it calls for, just for more flavoring. Amazing tasting almond biscotti, really simple to make. Ingredients

    3/4 cup butter
    1/2 cup Splenda blend (1 cup white sugar)
    2 eggs
    3/4 tsp vanilla extract
    3/4 tsp almond extract
    2 1/2 cups all-purpose flour
    1 tsp ground cinnamon
    3/4 tsp baking powder
    1 cup chopped almonds

Directions

Serving size: apporximately 18 biscotti

Preheat oven to 350 degrees.
In a medium bowl, cream butter and sugar.
Beat in eggs, vanilla extract, and almond extract.
Sift in flour, cinnamon, and baking powder into the egg mix.
Stir in almonds.
Separate dough into two equal logs, 1/2" thickness.
Bake for 30 minutes.
Remove from oven and cut the logs.
Bake for 5 minutes on one side, then flip the biscotti over and bake for another 5 minutes.
