    8 oz. Cream cheese
    1 1/4 t. mint extract
    8 cups powdered sugar
    (granulated sugar)


Blend cream cheese, mint extract, powdered sugar until stiff. Sometimes you may have to add a little more powdered sugar so the dough feels kneadable. Divide into 1/2 Tablespoon sized balls using a measuring spoon, roll smooth then roll into granulated sugar. Place on wax paper, push down flat with the bottom of a glass. This should make approximately 90 1/2 tablespoon sized mints. Let dry on counter overnight. Put in container between layers of wax paper.
