    2 lbs of chicken breast thawed, approx. 16 oz. of stewed tomatoes, 1 1/4 cup low fat mozz. cheese shredded, 1/4 cup fresh basil, 1 pkg stove top stuffing for chicken, and 1/3 cup roasted red pepper with parmesan dressing


Heat oven to 350F. Mix tomatoes, 1/2 cup cheese, and basil in medium bowl. Add stuffing mix, just stir until moistened. Place 2 chicken breasts into a ziplock bag and pound down to 1/4 of an inch (I used a meat mallet). Repeat with remaining chicken. Spread stuffing mix over chicken, and starting at the narrow end of the chicken piece, tightly roll chicken. Place seam sides down in a 13 X 9 baking dish. Drizzle with dressing. Bake 40 min. or until chicken is done. Sprinkle with remaining cheese and bake until melted.
