Number of Servings: 6


    8 oz. elbow macaroni
    2 tbsp cornstarch
    1 tsp salt
    1/2 tsp dry mustard
    1/4 tsp black pepper
    3 cups milk (calories are calculated based on skim)
    2 tbsp butter
    2 cups shredded cheddar cheese


1. Preheat oven to 375 degrees.
2. Cook pasta for 6 minutes and drain.
3. In medium saucepan, combine cornstarch, salt, dry mustard and pepper. Stir in milk until smooth. Add butter, stirring constantly.
4. Bring to a boil over medium-high heat. Boil for 1 minute.
5. Remove from heat. Stir in 1.75 cups of the shredded cheddar cheese until melted. Add the cooked pasta. Pour into a greased 2-quart casserole dish and sprinkle with remaining cheese.
6. Bake uncovered for 25 minutes, or until lightly browned.
