Bran muffins with blueberries instead of raisins Bran muffins with blueberries instead of raisins
Number of Servings: 12

Ingredients

    All purpose flour 1 cup
    Baking powder 1 tsp
    Baking soda 1 tsp
    Blueberries, fresh 1 cup
    Sour milk, non fat 1 cup
    Natural bran 1 cup
    Cooking oil 1/3 cup
    Egg 1
    Brown sugar, packed 1/3 cup
    Vanilla 1/2 tsp

Directions

Combine bran and milk, let sit for 5 minutes.
Combine dry ingredients and blueberries, make well. Add oil, egg, sugar, vanilla to bran mixture. Add bran mixture to dry ingredients. Stir just to moisten, batter will be lumpy. Fill greased muffin tins 3/4 full. Bake at 375 F for 20 - 25 minutes. Makes 12 muffins
