    3 large potatoes
    6 strips of chicken bacon
    4 tbsp green onion, chopped
    5 tbsp light sour cream
    2 tbsp ultra low fat cream cheese
    2 oz. light old cheddar cheese
    dash salt
    dash pepper


Bake the potatoes for 45-60min at 450 degrees. Fry the chicken bacon with a bit of water so they don't stick to the pan. Chop the green onion. When the bacon is done chop up and put in bowl and add the green onions.
When the potatoes are done slice in half and scoop out the potato and to the bowl. Place the skins in a casserole dish. Add the sour cream, cream cheese, salt and pepper to the potato mixture. Combine. Divide the mixture equally among the 6 potato skins. Sprinkle the tops with the cheese. Bake in the oven at 350 degrees for about 10-15 minutes. Serve.
