    2 overripe banana
    1/3 zucchini
    1.25 cups all purpose flour
    1/2 cup unsweetened applesauce
    2/3 cup sugar (or splenda)
    1 tsp baking soda
    2 eggs


in a mixing bowl combine applesauce, sugar, baking soda, eggs, and mashed bananas. then slowly sift in flour.
mix well.
grate zucchini ( no skin) and mix evenly into batter.
lightly grease bread baking pan and poor bread batter into pan.
bake in over at 350 deg. F for 1 hour and 15 min or until top is golden.

let sit and cool for 30 min before removing from pan and serving.

cut into 10 1 1/2 inch slices.

    How much is 1.25 cups of flour? I'm confused - 9/10/20

    I think it was a little too moist. It wasn't baked all the way through - yet had a hard almost burnt shell.

    My boys LOVED this though.
