Ingredients

    1 1/2 cup whole grain wheat flour
    1 cup oat flour ( can make this by blending rolled oats)
    2 teaspoon cinnamon
    2 teaspoon baking soda
    1/2 teaspoon ground ginger
    1/4 teaspoon salt
    6 Tablespoons unsalted softened butter
    1/4 cup unsweetened applesauce
    2/3 cup packed brown sugar
    1/4 cup molasses
    1 egg

    (3 tablespoons granulate sugar for dipping )

Directions

mix last 6 ingredients then mix in the rest . Chill for 30 minute to make handling easier. Fill and level small cookie scoop or slightly rounded teaspoon. Fill parchment lined pan.
When pan is full go back and flatten cookie with the bottom of a sugar dipped glass to 1/4 inch thickness. Bake at 350 degrees for 10 minutes. Remove to a cooling rack.
