    1 can water packed tuna
    3 tbsp low fat Hellman's Mayo
    1 apple slice (about 1/12 apple) chopped very small
    1 Tbsp celery, chopped very small
    5 cucumber chips chopped small
    1 green onion
    about 1 tbsp med. cheddar cheese chopped very small
    1/2 plum tomato, diced small

    1 Cup of baby spinach leaves to place finished salad on.


Mix together well and place 1/2 recipe on a bed of baby spinach leaves, or place spinach leaves on a slice of bread and put 1/2 of salad on top.

    Can't believe no one has commented! I used low sodium tuna, and skim mozerella instead of chedder, but the combination of the baby spinach with tuna and apples is delicious! - 2/17/12
