Introduction

Ingredients

1Tbls olive oil
1 lb boneless/skinless chicken thighs (cut into 1/2" pieces)
48 oz chicken broth
3 med onions (chopped into lrg pieces)
3 cloves garlic chopped
3 bell peppers (any color, chopped into large pieces)
1 can diced tomatoes w/italian seasonings
8 oz ronzoni smart taste angel hair pasta
1/4 cup parsley
1Tbls italian seasoning
1 bay leaf
salt/pepper to taste
Directions
1. In a dutch oven combine oil and chicken until it begins to brown. (approx 5-6 mins) Remove and reserve in a small bowl.
2. Add approx 2-3 Tbls of broth to the pot and scrape up brown bits and add the onion and garlic. Cook approx 7 min then add chopped peppers and cook another 5 mins until tender.
3. Add broth, tomatoes and all the seasonings.
4. Bring to a boil then add angel hair pasta
5. Lower heat and simmer covered for about 15 mins.
Optional: Add steamed broccoli and/or cauliflower to your bowl before adding soup for even more veggies. If added to soup pot they get mushy and alter the taste a bit. A sprinkling of parmesan on top is good too.
Makes 8-10 hearty servings. Great leftover.
