Introduction

Ingredients

    2 Tbsp. olive oil
    1 medium sweet yellow onion, chopped
    1 clove garlic, crushed
    3 medium potatos, diced
    8 large eggs, beaten
    1 cup shredded cheddar cheese

Directions

Put olive oil, onion, garlic, and potatos into large skillet. Cover and cook until potatos are tender, stirring frequently. While potatos are cooking, beat eggs in separate bowl. When potatos are cooked to desired tenderness, pour eggs over the top, and stir until eggs are cooked. Sprinkle cheese on top, remove from heat, and cover until cheese melts. Delicious served with a flour tortilla and homemade salsa.
