    2 large onions
    16 oz baby potatoes
    8 oz cherry or grape tomatoes
    1 yellow bell pepper
    1 red bell pepper
    2.25 oz black olives (canned-drained)
    2 Tbls olive oil
    1/2-1Tbls Sea Salt
    1 Tbls oregano (dried)
    2 Tbls smoked paprika
    1 tsp black pepper


1. Preheat oven to 425.
2. Cut vegetables into bite size pieces and place in a large bowl
3. Mix all spices together in a small bowl
4. Pour Olive oil and spices over vegetables and then toss all together.
5. Spread evenly over a large, ungreased cookie sheet.
6. Bake for 45-50 minutes until potatoes are easily pierced by a fork.
