    1/2 package mori nu extra firm silken tofu
    7-9 drops stevia
    1 tsp coconut extract (optional)
    1 tsp vanilla extract (or more, if not using coconut)
    2 tbs unsweetened reduced fat coconut
    1 tbs rolled oats (not instant)
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    15 grams pitted medjool dates


Process oats, 1 tbs. coconut, dates, half the cinnamon and the nutmeg until well combined and the mix begins to stick to itself. Press crust into the bottom of a ramakin. I use waxed paper under my fingers so I don't stick to it!

Place crust in freezer or fridge while you make the filling.

Blend the tofu, remaining coconut, remaining cinnamon, extract(s) and stevia until well mixed, stopping to scrape down the sides as needed. Taste and see if it's sweet enough. If you want more sweetness, add stevia a drop at a time - taste frequently! Don't overdo the stevia!

Pour filling into crust and chill until it firms a bit and is cold.
