Introduction

Similar to a beef stroganoff, but in the crockpot.

Freezes well, although heat slowly so you dont curdle the milk products.

I serve over whole wheat ziti or egg noodles, whatever is big in the pantry. Dont freeze with the pasta or the pasta gets mushy. Pasta is NOT included in the nutritional info.

Ingredients

    3lbs Stew meat, cubed
    1 cup Mushrooms, pieces or slices
    3 tbsp Onions, chopped
    2 cloves garlic, minced
    1 tsp Salt
    1 Tbsp Oregano, ground
    1-2 Bay leaf, whole
    1.5 cups Beef broth, bouillon, consomme
    1/3 cup Sherry, dry
    1/2 cup Sour Cream
    3/4 cup plain yogurt
    1/2 cup Water, tap
    1/2 cup flour Wheat flour


Directions

1. Layer, beef, mushrooms, onion, garlic, salt, oregano, pepper and bay leaf in crockpot (I use 6qt for this- use half recipe for 3 1/2-4qt)

2. Mix together beef brother and sherry and pour over meat mixture.

3. put lid on and cook on LOW 8-10 hours or High 4-5 hours.

4. Discard bay leaves

5. In separate bowl combine sour cream, yogurt, flour, water and 1 cup of broth from slow cooker. Stir until combined.

6. Add sour cream mixture to crockpot and stir throughly.

7. Cook uncovered on HIGH about 30 minutes or until thickened and bubbly.

Serve over noodles.

Cool throughly before freezing.
