    2 medium spaghetti squash
    1 1/2 cups sliced mushrooms
    1 medium green or red pepper, diced
    1 lb ground turkey meat
    1/3 cup chopped onion
    3 cloves garlic, minced
    1/4 cup black olives, chopped
    1/2 t Italian Seasoning
    1 1/2 cups tomato sauce
    1 1/2 cup shredded low fat monterey jack or mozzarella cheese
    1/4 cup fresh parsley


1. Cut squash in half; remove seeds.
2. Place squash, cut sides down, in dish with 1/2 cup of water. Cover with plastic wrap; microwave on high 13-15 minutes or until squash is tender when pierced with fork.
3. In large skillet, cook turkey, mushrooms, pepper, onion, and garlic until turkey is browned. Drain excess fat.
4. Preheat oven to 350. Scrape pulp from squash with a fork. Spray 8x8 inch cooking dish with spray. Spread half of squash in dish. Add 1/2 the meat mixture, then 1/2 the olives. Sprinkle with Italian seasoning; flavor with salt and pepper. Top with 1/2 the sauce and 1/2 the cheese. Repeat squash-meat-sauce layers; sprinkle with cheese.
5. Bake 5 minutes or until cheese is melted. Let stand 10 minutes. Sprinkle with parsley.
