    3 Al Fresco sweet Italian chicken sausages
    2 small yellow onions, diced
    2 cloves garlic or to taste, minced
    1 tbs olive oil
    1 tsp Italian Seasoning
    1 tsp crushed red pepper or to taste
    1 tsp fennel
    2 packed cups fresh spinach, rough-chopped
    28-oz can diced tomatoes, drained


Brown sausages in olive oil. Add onions and sautee until translucent. Add garlic, seasonings, and spinach; cook until spinach has wilted, about 30 seconds. Add tomatoes and stir. Simmer 20 minutes to blend flavors. Divide into 3 servings.
