Introduction

Delicious and filling, but very little meat. Delicious and filling, but very little meat.

Ingredients

    1 Tb Olive oil
    ½ Large onion
    2 cloves garlic
    ¾ c. chopped zucchini
    ½ cup sliced mushrooms
    ¼ c. roasted red peppers
    2 – 15 oz cans crushed tomatoes (100% natural)
    1 – 6 oz can tomato paste
    1 15 oz. diced tomatoes
    ½ lb or one large link Italian chicken sausage
    ¼ C.. red wine
    1 tsp sea salt
    1 tsp each rosemary, onion powder and chili powder
    1/8 tsp ground cloves
    fresh thyme and basil to taste
    1 ½ cup water
    2 boxes gluten free fettuccini (I use DeBoles)

Directions

Sautee all vegetables, garlic and onion in olive oil. Remove from pan and set aside. Remove sausage from link, brown and crumble. Leave in pan and add red wine. bring to boil. Turn down heat and add veggies, diced and crushed tomatoes and paste. Add water, herbs, spices and salt. Bring to soft boil, then turn down heat and simmer for about an hour or cook on low in crock pot for about 4 hours. Serve over fettuccini. 8 servings.
