    1 can (16 0z) fat free refried beans
    .5 cups salsa
    .5 tsp chili powder
    8 fat free tortillas
    1 cup shredded lettuce
    .5 cup shredded monterey jack cheese


mix beans, salsa, chili powder in 1 quart saucepan. Heat over medium heat for about 5 minutes stirring occasionally.

spoon about 1/4 cup of bean mixture onto each tortilla center spreading slightly. Top with lettuce and cheese. Folr over sides and end of tortilla.

  • I made this for lunch today (eating it now) just went vegetarian a few weeks ago was looking for something different for lunch, and this was delicious, quick and easy!! Although I used regular refried beans and whole wheat tortillas...Would definately make it again!!! - 8/30/07
