Ingredients

    4 c butternut squash, cubed
    2 cloves garlic
    1 vidalia onion
    2 c low-sodium chicken broth
    1/2 c part-skim ricotta cheese
    1/2 tsp crushed red pepper
    1 tsp salt
    1 tbsp olive oil

Directions

Brush squash, garlic and onion w olive oil. Roast in oven at 375 degrees for 40 min.

Combine w remaining ingredients in food processor.

Pour into saucepan and simmer on low heat until flavors settle in.
