    1 boneless skinless chicken breast, cut into slices
    1 can stewed tomatoes
    1 small can tomato sauce
    4 oz Mozzarella cheese
    1/2 cup Panko bread crumbs
    1/2 cup grated Parmesan cheese
    2 tbsp Italian seasoning
    2 tbsp Garlic Powder
    1 egg
    2 cups dry macaroni (or your choice of pasta)


mix tomato sauce and stewed tomatoes in sauce pot, stir in 1tbsp italian seasoning and 1 tbsp garlic powder, heat on low for 10 minutes.

boil macaroni according to package directions

Preheat oven to 425

beat egg, set aside. In a large zippered bag or lidded container mix bread crumbs, parmesan, and the rest of the italian seasoning and garlic powder. dip chicken slices into egg and place in bread crumbs. seal the bread crumb bag/container and shake until chicken is coated.

place chicken evenly on a baking pan coated with cooking spray. back for about 15-17 minutes, turning chicken halfway through cook time.

serve the sauce over the macaroni, topped with chicken and mozzarella

makes about 4 servings.
