    Spinach, fresh, 175 grams
    Canola Oil 1tsp
    Onions 100 grams
    Egg 3 large
    Parmesan Cheese, grated, 1 tbsp
    Nutmeg, ground, 0.5 tsp


Cook spinach with only water from washing until softened, about 6 mins.

Drain well, squeeze dry and chop finely.

Heat oil and fry onion until soft and browned, stir in spinach.

Whisk eggs with cheese, nutmeg and some black pepper.

Place spinach/onion mix into a dish, pour over egg mix.

Place in oven at 180'C for 30 mins or until set.

Good hot or cold.
