Number of Servings: 6


    1 1/4 pounds grated potato, squeezed of excess water
    1 grated onion
    2T coconut oil
    3/4t sea salt
    1/4t pepper

    6 eggs

    2 avocados

    Chipolte Hot Sauce


Mix the drained and squeezed potatoes and onions together, add salt and pepper.

Place 1T coconut oil in non stick cooking pan. heat over medium heat. Divide mixture into 6 heaps. Place 3 heaps in skillet and cover with aluminum foil. Cook 7 minutes. Turn over and cook another 8 minutes. Repeat with remaking potatoes.

Cook eggs in same pan. While eggs are cooking mash avocados and divide into 6 equal parts placing 1 part on each pancake. When eggs are done, place 1 egg on top of each pancake a drizzle with hot sauce.
