Introduction

Use mama's bake mix to make low carb muffins, pancakes, loafs and so much more.
Be creative by replacing mushed fruit of any kind for the water.
Use fancy silicon muffin moulds-my favourite!
For a low fat version replace applesauce or any mushed fruit for the oil and water.

Number of Servings: 6

Ingredients

    3/4 cup almond meal
    3/4 cup flax meal
    1 tbsp bkg pwdr
    1.5 tsp pure almond extract
    3/4 tsp cinamon
    6 eggs
    2 Tbsp oil
    6 pkts Stevia
    3 Tbsp water or mushed fruit (any kind)

Directions

-beat egg, extract, oil and water
-stir in mix
-pour into 6 mould (pre-sprayed with non-stick spray if desired)

Bake at 350 F for 15 minutes

For a loaf, place mix in loaf pan for 30 minutes
For pancakes use griddle or fry pan lightly oiled and cook slightly lower temp than regular pancakes.
