    1 bunch broccoli, chopped
    1 large onion
    2 garlic cloves
    3 cups low-sodium chicken broth
    1 cup water
    3/4 cup fat-free evaporated milk
    1 tablespoon Dijon mustard
    4 ounces extra-sharp cheddar cheese, shredded


Combine broccoli, onions, and 1/4 teaspoons salt in a Dutch oven. Cover and cook 6-8 minutes until soft. Uncover, add garlic and cook for 30 seconds.
Stir in broth and water and bring to a simmer over medium-high heat. Cover, reduce heat to low and simmer for about 10 minutes.
Puree the soup in two batches in a blender. Return to Dutch oven, add the evaporated milk, mustard, and warm over low heat until hot.
Off heat add the shredded cheese until melted.
