Ingredients

    Also required - breadcrumbs

Directions

Boil the potatoes, then mash with the butter
Cook the fish in the microwave for 3 minutes, covered in cling film. When cooked and cool enough to handle, flake the fish
Cut the bacon into small pieces and fry
Chop the parsley
When all the above is done, mix all the above ingredients and season
Divide into 8 and make into patties
Roll in the breadcrumbs
Fry the fishcakes in a little olive oil for approx 10 mins
