    * 4 (6-ounce) Red Potato
    * 1 tbsp Extra Light Olive Oil
    * 1.5 cups Onions, raw
    * 1 1/4 Swanson Chicken Broth 99% Fat Free
    * 3 tbsp Flour
    * 1 cup Milk, nonfat
    * 1 cup Buttermilk, lowfat
    * 1/4 cup Sour Cream, reduced fat
    * 1/2 tsp Salt
    * 1/4 tsp Pepper, black
    * 4 tbsp Hormel Bacon Bits (or real bacon)
    * 1/3 Cheddar Cheese


1. Pierce potatoes with a fork. Microwave on HIGH 13 minutes (or less according to your microwave) or until tender. Cut in half; coll slightly.
2. While potatoes cook, heat oil in a saucepan over medium-high heat. Add onion; saute 3 minutes. Add broth. Combine flour and 1/2 cup of milk; add to pan with remainder of milk and buttermilk. Bring to a boil; stir often. cook 1 minute. Remove from heat; stir in sour cream, salt and pepper.
3. Discard potato skins. Coarsely mash potatoes into soup. top with cheese, bacon and green onions.
Makes about 4 servings.
