Introduction

This is great for those following a low fat, low calorie, and/or diabetic diet. I actually used a poblano pepper instead of chili peppers, but could not find poblano peppers in the database of foods. You can add just about any vegetable to this soup, but I would stay away from potatos, corn or starches if you are following a diabetic diet and watching carbs as wel! Ingredients

    1 can Hunts Diced Tomatos
    1 can tomato paste
    1 can tomato sauce
    2 cups fresh green beans, snapped
    2 cups fresh zuccino, chopped
    1 cup yellow squash, chopped
    3 cups chopped carrots (or baby carrots, whole)
    1 large poblano pepper, chopped (cored)
    1 medium onion, chopped coarsely
    2 cups fresh or frozen broccoli, chopped
    1/2 cup snow peas
    2 stalks celery, chopped diagonally
    6-8 cups water
    1 tbsp black peper
    2 tbsp oregano (dried)
    1 tbsp basil (dried)
    2 tsp Mrs. Dash Original Blend

Directions

Cut vegetables coarsely. Add all ingredients to large stock pot. Cook over high heat and boil for approximately 30 minutes until vegetables are still a bit crunchy; then lower heat and boil slowly another 30 - 60 minutes untll vegetables reach desired tenderness.
