    2 Portobello mushrooms
    2/3 cup chopped tomatoes, de-seeded
    1/3 cup feta cheese
    2 tsp olive oil
    tsp dried rosemary
    1/8 tsp ground black pepper
    1 garlic clove, diced
    2 Tbsp lemon juice
    2 Tsp low sodium soy sauce

    recipe calls for chopped tomato, but my BF hates them so I am subbing w eggplant - calorie count calc'd w eggplant


Preheat toaster oven or regular oven to 400F. Or prepare the grill on medium high.

Combine cheese, chopped tomatoes, 1 tsp olive oil, black pepper, and dried rosemary in a small bowl.

Remove the brown gills from the undersides of the caps using a spoon. Then remove the stem.

Combine 1 tsp olive oil, soy sauce, and lemon juice in another small bowl and brush over both sides of the cap.

Then divide tomato mixture between the two caps. If using a toaster oven or regular oven, place caps in the baking tray.

Bake for 5 to 8 minutes or until bubbly and melty! Or grill for about 3 5 minutes (you can place the portobellos on aluminum foil for ease of removing from the grill).
