    4 Tbsp Extra Virgin Olive Oil
    3 lb skinless boneless chicken breast cut into strips
    5 cups chopped onions
    2 cups sliced mushrooms
    1 can Thai Kitchen coconut milk
    1 packet S&B Golden Curry Sauce
    4 serving Mahatma Jasmine Rice
    1/2 cup Swanson's Reduced Sodium Fat Free Chicken Broth


Prepare 4 servings Jasmine rice according to package directions.

Heat electric skillet to 350.

Place oilive oil in skillet, add cut chicken breast and cook chicken with onions and mushrooms. Let cook for 10 min and add chicken broth. Let cook for another 10 min and add coconut milk and curry powder.

Let cook for another 10 minutes stirring occasionally while thickeing to your likness.

When thickened to your lickness, serve over your rice.

Makes 12 1 cup servings.
