Introduction

This is an easy low-fat snack with both carbs and protein to keep your hunger in check until your next meal. This is an easy low-fat snack with both carbs and protein to keep your hunger in check until your next meal.

Ingredients

    1 Can pumpkin puree (15 oz)

    1 Cup whole wheat flour

    1 Cup protein powder (I used Muscle Milk Light Vanilla--If you use one that is less sweet, you may need to add 1/3 cup sugar or sugar substitute to your recipe)

    1 tsp pumpkin pie spice (or add your own assortment of cinnamon, ginger, clove, nutmeg, allspice)

    2/3 Cup of Oats

    1 tsp baking powder

    1/2 tsp baking soda

    1/2 Cup milk 1%

    1 whole large egg

    2 egg whites

Directions

Mix dry ingredients in a bowl. For this recipe, I used Muscle Milk Light, which is sweeter than many other protein powders. You may need to add sugar or sugar substitute to suit your taste.

Mix in wet ingredients.

I use a non-stick muffin pan which does not need to be pre-greased, but if you don't have one, lightly spray the pan with Pam or your preferred cooking spray.

Bake in muffin pan at 375 for approx 30-45 minutes, or until a toothpick or knife inserted in the center comes out clean.
