Introduction

Ingredients

    1 pkg chicken breasts
    8 pineapple rings, 4 chopped & 4 whole
    3/4 cup chopped carrots
    3/4 cup chopped onion
    Juice from canned pineapple
    1/2 cup teriyaki sauce
    4 oz shredded 2% pepperjack cheese

Directions

Preheat oven to 350 degrees. Spray baking dish with non-stick cooking spray. Place chicken in baking dished. Sprinkle with onion, carrots, and pineapple chunks. Mix pineapple juice and teriyaki sauce. Pour over chicken. Bake for 35 minutes, spooning sauce over chicken once. Take chicken out and put 1 pineapple slice on each breast and sprinkle with cheese. Bake an additional 10 minutes.

Serving size = 1/2 chicken breast w/ 1/4 cup veggies
