Ingredients

    2 tbsp cider vinegar
    1 tbsp olive oil
    1 1/2 tsp sugar
    1/4 tsp kosher salt
    1/4 tsp ground black pepper
    3 cups fennel bulb, thinly sliced (1 large bulb)
    4 small apples or 1 large apple, cored and thinly sliced
    1/4 cup flat leaf parsley, chopped
    1/4 cup red onion, thinly sliced

Directions

Combine vinegar, oil, sugar, salt and pepper. Whisk until sugar dissolves. Add in remaining ingredients and toss to coat.

Makes 4 1 cup servings.
