    8 Large eggs, scrambled with water (salt and pepper if desired)
    4 cups mixed veggies with broccoli, cauliflower, carrots, etc.
    1/2 cup Bacon Bits (or chopped up bacon)
    2 Cups Shredded cheddar cheese


Preheat oven to 350

In a casserole dish, evenly pour in vegetables, pour in the scrambled eggs (mixed with your choice of seasonings), sprinkle the bacon bits and cheese over the top. Cover and cook - usually around an hour or so. Serves 7
