    2 sausages
    1 400g tin of chopped tomatoes
    1cup pinto beans
    0.5 cup of butter beans
    1 carrot peeled and chopped
    1 garlic clove, peeled, crushed and chopped
    1 courgette, chopped
    4 mushrooms, sliced thinly
    0.5 cup of sweetcorn
    1 cup broccoli
    + 1 cup of water if desired

    Herbs and seasonings as preferred


-Cut the sausage into small bite sized pieces.
-Place sausage in saucepan and cook until sausage is browned. You can use a small amount of oil at this stage.
-Add the garlic to the pan and cook for another minute.
-Add the tinn of chopped tomatoes to the dish and stir.
-Add remainder of ingredients and 1 cup of water if desired. I prefer this as it gives more 'sauce', without it can be dry.
-Bring to the boil and add seasonings as preferred. I use pepper,basil,rosemary and thyme.
-reduce to a simmer and leave to cook for 30 miutes. The sauce will have reduced slightly and all of the ingredients cooked thoroughly.

I have served this with a variety of side dishes;
Cooked cabbage/other veg
Boiled/Mashed potato
Fresh bread

Other veg can be used in the Stew. I usually use what is available at the time.

MAKES 4 Servings of approximately 1cup each.
