Ingredients

    1c cooked mashed pumpkin (boiled and mashed)
    60g butter
    1c sugar
    1c milk
    2.5c sugar
    2ts baking powder
    1tb cornflour
    1/2ts cinnamon
    pinch salt
    rind of one orange
    1c sultanas or raisins

Directions

Cream rind and sugar, then add cooled pumpkin, sugar and milk slowly, blend. Sift dry ingredients and add with sultanas. Bake in a moderate oven till firm and golden, in a lined tin. Can ice with orange icing, but this is not included in the calorie count.
