    1 roasted chicken thigh, skin & bone removed, cut in 1in. cube
    2 tbsp. celery, diced
    1/8 c. dried cranberries, roughly chopped
    1/2 tsp. curry powder
    1/2 oz. cashews, roughly chopped
    1 tbsp. light sour cream
    1 1/2 tbsp. plain non-fat yogurt
    Salt & Pepper to taste
    2 slices (70 calorie) wheat bread or 1 slice (140 calorie) wheat bread


Combine all ingredients in a bowl and mix well. Sandwich between two pieces of wheat bread, or make an open face sandwich with one piece of bread piled high with the curry.
