Ingredients

    3 peaches, peeled and cut into small pieces
    3 cucumbers, peeled, seeded, halve and slice
    1 sweet onion, diced
    1/4 cup extra virgin olive oil
    2 tbsp. organic cider vinegar
    1/4 cup lime juice
    mint
    salt and pepper

Directions

Combine & Mix well.

The longer (up to 6 months) you allow this relish to be put up & shelved the better the taste.
