    2 tsp olive oil
    1 medium head of cabbage thinly sliced
    1 cup matchstick carrots
    6 cloves chopped garlic
    1 tsp thyme
    4 cups chicken stock
    28 oz tomato sauce
    6 TBSP tomato paste
    1 cup water
    2 cans rinsed, drained cannellini beans


In a large pot, heat olive oil over high heat. Add cabbage, carrots, garlic and thyme. Cook 5 minutes.

Stir in stock, tomato sauce, tomato paste, water and beans.

Bring to a boil, then reduce heat. Simmer covered for 20 minutes or until cabbage is tender.

Makes 12 Servings.
