    20 oz. boneless skinless chicken breast, cut into small chunks
    1 lg. can diced tomatoes
    1 can sliced mushrooms, drained
    1 small can sliced black olives
    1 cup diced celery
    1 cup diced green pepper
    1 cup diced onion
    1 tbsp olive oil
    1/2 1 lb package whole wheat rotini


Makes 4 servings

Sautee the chicken until browned. Sautee the diced veggies in the olive oil. Add the chicken back in. Add the canned mushrooms and drained diced tomatoes (save the juice - add it as needed to keep the chicken and veggies moist). Season as desired (salt, pepper, italian herbs).

In the meantime, cook the rotini per the instructions.

Toss the rotini and slliced black olives in the chicken/veggie mixture.
