Introduction

This is my mom's famous chocolate zucchini bread recipe, with a few of my lighter substitutions This is my mom's famous chocolate zucchini bread recipe, with a few of my lighter substitutions
Number of Servings: 24

Ingredients

    1/2 c butter, softened
    1/2 c. applesauce
    1 3/4 c. sugar
    1/2 tsp. salt
    1/2 c. egg substitue
    1 tsp. vanilla
    1 c. all purpose flour
    1 1/2 c. whole wheat flour
    4 TBSP cocoa
    1 tsp. baking soda
    1/2 tsp. baking powder
    1/2 c. sour milk (milk with a dash of vinegar)
    2 c. shredded zucchini
    1 c. chocolate chips

Directions

Cream butter, applesauce, sugar and salt. Add eggs and vanilla. Beat.

Mix dry ingredients separately (flour, cocoa, baking soda, baking powder).

Add all but about 1 c of dry mix to wet. Add half of milk. Beat. Add remaining dry mix and milk. Beat.

Mix in shredded zucchini by hand. Mix in chocolate chips by hand.

Pour into 2 well greased bread pans. I would imagine you could save more calories and fat if you had silicone bread pans!

Bake at 350 degrees for 60 - 75 minutes.

Makes 2 loaves, about 12 slices in each loaf.
