    4 Cups Cooked Diced Chicken Breasts
    8 Cups Chicken Broth
    2 stalks celery
    c. fresh parsley
    1 tsp. sea salt
    6-8 whole peppercorns
    1 lb. Great Northern Beans (soaked in water overnight)
    2 medium onions, chopped
    c Roasted Red Peppers
    1 small can mild chili peppers (optional)
    C. fresh cilantro
    1/2 pkg Homemade Gourmet Tortilla Soup Mix
    2 tsp Cumin, ground
    1/4 tsp cayenne pepper
    2 Garlic Cloves, minced
    1 Cup Salsa
    2Tsp. Olive Oil


Cook beans until tender. (You can do this the night before if you wish, then refrigerate them)
In another pot, cook chicken in 6 cups water with the peppercorns, celery and parsley. After chicken is cooked, add 2 cups low fat chicken broth (Makes 8 C. broth) in a very large stew pot. (6 quart pot?)
When chicken is cooked, remove from broth , cool, and chop into pieces. Set aside.
Saute the garlic , onions , peppers for 2 hours in the chicken broth. Make sure beans are soft.
Add Chicken and salsa.
Saute peppers, cilantro, spices, salsa and remaining onions in olive oil. Add to Chili. Add Tortilla soup mix, stirring well. Simmer for an hour, stirring occasionally.
Serve with light sour cream, low fat tortilla chips or reduced fat cheese for added flavor! (Serves 8-10--nutrition info is based on 10 servings)
(You can spice it up by adding jalepeno peppers. )
