Introduction

Ingredients

    1 c. cottage cheese, 1%
    4 eggs
    1/2 c. white flour (whole wheat flour works well also)
    1/2 t. salt
    1/4 c. canola oil
    1/2 c. milk, 2%
    1/2 t. vanilla extract

Directions

Mix all ingredients in a blender until combined. Pour onto hot, greased griddle into 4" pancakes. Flip when pancakes have set (around three minutes.) Makes approximately 18 pancakes.

    This sounds great. My family (especially my 3 year old grand-daughter) loves pancakes and I make them often. - 10/4/10
