This soup is very satisifying and hearty! I hope you enjoy it as much as my family does. This soup is very satisifying and hearty! I hope you enjoy it as much as my family does.
Number of Servings: 8

Ingredients

    8 cups chicken stock (canned)
    1 cup chopped carrots, celery and onion
    1 pound Ground Turkey
    1/2 cup dried breadcrumbs (seasoned)
    2T Parsley (dried)
    2T Garlic Powder and Onion Powder
    1 Large Egg
    3 large garlic cloves, chopped
    1/2 Cup Parm Cheese
    1 Cup White Rice (uncooked)
    4 Cups Kale (uncooked and chopped)

Directions

To make meatballs:
Place breadcrumbs, parm cheese, garlic and onion powder, parsley and large egg in a bowl. Combine. Add ground turkey and combine. Make into 35 - 40 small meatballs (1 tablespoon each).
Make soup broth by saute' onion, carrot and celery in oilive oil until tender. Add chopped garlic and saute' another minute. Add chicken stock and bring to boil. Turn down to simmer and toss in meatballs and uncooked rice to slowly cook in broth (about 20 minutes). Add chopped Kale and cook another 5-8 minutes. Enjoy!
