    Tamale Filling:
    2 Tbsp Canola Oil
    1 Medium Onion minced
    2 Tbsp Chili powder
    1/2 tsp salt
    2 medium cloves of garlic minced
    1 lb ground turkey
    1 15.5 oz can of black beans, drained and rinsed
    1 14.5 oz can diced tomatoes, drained
    3 oz low fat cheddar cheese, shredded (approx 1 cup)
    2 Tbsp minced fresh cliantro
    Pepper to taste.

    Cornbread Topping
    3/4 Cup Flour
    3/4 Cup Yellow Cornmeal
    3 Tbsp sugar
    3/4 tsp baking powder
    3/4 tsp baking soda
    3/4 tsp salt
    3/4 cup low fat buttermilk
    1 large egg
    3 Tbsp margarine, melted and cooled


Preheat oven to 450 degrees

For Tamale Filling: Heat oil in a large skillet, add the onion, chili powder and 1/2 tsp salt and cook until onion is softened, about 5 minutes. Add the garlic and cook approx. 30 sec.

Stir in ground turkey, beans, and tomatoes, and bring to a simmer, breaking up the meat-cook for about 5 minutes. Stir in cheese and cilantro and season with salt and pepper.

Cornbread Topping: whisk the flour, cornmeal, sugar, baking powder, baking soda, and salt together in a large bowl. In a separate bowl whisk together buttermilk and egg. Add buttermilk mixture to flour mixture and stir until combined. Stir in butter and mix until just blended.

Drop cornbread batter evenly over the filling and spread into an even layer. Bake (in skillet) until cornbread is cooked through to the center, about 10-15 minutes.
