    3/4 c Egg Beaters
    1 c fresh, organic spinach
    1/4 c fresh mushrooms, chopped
    2 T onions, chopped
    1 T Parmesan cheese

    1 Thomas Light multigrain english muffin
    5 sprays I cant believe it's not butter spray
    mix of ground cinnamon and splenda


spray a non-stick skillet with cooking spray, and add medium heat.
put spinach in pan, and cook until slightly wilted. Add mushrooms and onions and cook until desired tenderness.
Add egg beaters and parmesan cheese, using spatula to turn.

Meanwhile, toast english muffin. Once toasted, spray with butter spray and sprinkle cinnamon/splenda mixture on top.
