    1 C shredded zucchini
    1/4 C panko bread crumbs
    2 green onions, chopped
    1 egg
    3 Tbsp minced fresh parsley
    1 Tbsp dill
    1 garlic clove, minced
    1/4 C feta cheese


Preheat oven to 450.

In a colander, drain shredded zucchini by squeezing excess liquid. Pat dry. In a small bowl combine zucchini, bread crumbs, onion, egg, parsley, dill, garlic and cheese.

Line baking sheet with foil sprayed with olive oil spray. Drop batter by 2 TBSP on foil. Press to flatten. Bake 10 minutes. Turn and cook another 10 minutes or until brown.

3 pancakes =serving
